Malolactic Fermentation

A process that occurs after initial fermenation, that gives wine a smooth mouth-feel. Wines that have undergone this second fermentation are said to be “malo”.


Any grower of grapes who also makes wine. It is derived from the French term, “Recoltant-Manipulant”.


A substance that is made by distilling pomace. Also a term for the actual pomace.
